1. Spread butter all over one side of each bread slice. Flip 4 slices over and spread evenly with jam, then layer each with 1/4 cup cheddar, 2 slices bacon, 2 slices tomato, and 1/4 cup Monterey Jack. Cover with remaining bread slices, buttered-sides up.
2. Heat a large nonstick skillet over medium-low heat and place two sandwiches in pan. Cook, flipping halfway through, until cheese is completely melted and bread is golden brown on each side, 2 to 4 minutes per side. Repeat with remaining sandwiches and serve.
