Sugar Snap Pea and Orzo Salad
2 oz Sour Cream, light
2 tablespoon Reduced fat mayonnaise
1 1/2 teaspoon Extra virgin olive oil
1/4 teaspoon Salt, Kosher
1/16 teaspoon Black pepper, ground
1/16 tsp tabasco sauce
2 tsp cider vinegar
4 oz Orzo pasta
4 oz Snow peas, fresh, stringless
2 each Fresh medium scallions, tops and bulb, 4 1/8" long
2 tablespoon Bacon Bits

Sugar Snap Pea and Orzo Salad

1. To prepare the dressing, whisk together sour cream, light mayonnaise; first amount of olive oil; salt, freshly ground pepper, Tabasco sauce and vinegar in a small bowl and set aside.
2. Prepare orzo pasta according to package instruction and set aside to cool.
3. Toss the cooked orzo and remaining olive oil in a medium bowl. Add the sugar snap peas; thinly sliced scallions; and bacon, and mix gently.
4. Add the dressing to the orzo and stir to coat the ingredients.
5. Serve immediately or refrigerate until needed.
